Grilled Potatoes & Garlic


2 to 3 large baking potatoes
15 large garlic cloves
1 large onion
1/2 cup olive oil
Fresh basil (chopped)
Fresh oregano (chopped)
Fresh thyme (chopped)
Fresh rosemary (chopped)
2 bay leaves
Coarsely ground black pepper
Garlic salt

Leave water pan out of smoker. Scrub potatoes, but leave skin on. Cut each potato in half, then cut each half into 6 - 8 wedges. Rinse in cold water and pat dry. Put potatoes, onions, garlic, herbs and bay leaves into roasting pan. Pour olive oil over to coat. Smoke potatoes 1 to 2 hours or until tender. Turn occasionally with flat spatula. Season with salt and pepper before serving.

Note: Use a roasting pan large enough so that potatoes do not overlap in order to achieve desired crispiness.
